It was right there in the name -- "Jon Ryan's Pubs."
On Sunday, at 11 a.m., Ryan's vision comes to fruition with the opening of a new Jon Ryan's Pubs location in Billerica. He expects to hit the ground running and has high aspirations for the new restaurant.
"Jon Ryan's in Billerica is positioned to be the premium in sports pub in all of greater Boston with fresh food not simply pub grub!" said Ryan. "I will put my food up against polished casual restaurants every day."
Ryan credits his kitchen staff with providing a dining experience that has been well received by the public.
"I have surrounded myself with talented culinary experts who will help to grow the brand," he said. "Our newest culinary edition is from The Burtons restaurant group."
The Billerica Jon Ryan's Pubs is located in the historic Manning Manse, 56 Chelmsford Road, just off Route 3. The building is a gorgeous 300-year-old Colonial home, divided into two sections. One section has has undergone modern interior renovations has has been home to several restaurants over the years. But the main house has been maintained with historic authenticity by the Manning Association, which owns the property.
Doing renovation in an historic building comes with unique challenges. Preparing the restaurant for its Sunday opening has been a nine-month process but one Ryan feels has been well worth the effort. In fact, he sees Jon Ryan's Pubs Billerica as the model for future restaurants in his budding chain.
"The Billerica pub is the prototype for the Jon Ryan's brand and will be the model for the next three pubs in the next four years," said Ryan., who enjoyed a 20-year career with the Ninety-Nine Restaurants chain before branching out on his own. "We will remodel Tewksbury (1775 Main St.) by the end of 2014 to increase our brand recognition."
The new restaurant has a main dining area, as well as a full service bar with pub seating. And of course, plenty of television screens for patrons to keep track of the local and national sports action.
Eventually, Ryan plans to utilize two rooms in the main house for private functions and additional dining space.
Ryan's exuberance as he talks about his vision for the future goes beyond that of a confident business owner. He is also a proud father. Jon Ryan's Pubs is named for Bob Ryan's oldest son and he plans to turn the business over to him in a few years.
"I plan to retire in four years and Jonathan will take the reins," said Ryan. "He is learning every aspect of the business and is by my side every day. Without him I wouldn't be able to do what I do.
"Jon Ryan's Pubs will be my legacy along with my children!"
Jon Ryan's Pubs in Billerica is open Sunday through Wednesday from 11 a.m. to 9:30 pm and Thuraday through Saturday from 11 a.m. to 10:30 p.m. The bar is open an hour later each night.
